Traditional Cock-a-Leekie Soup Recipe

A delectable Scottish soup dish

A traditional Scottish recipe made with chicken, leeks and prunes.

Ingredients

4lb boiling fowl, including legs and wings
1oz long grained rice
4 oz cooked, stoned prunes
1lb leeks cleaned and cut into 1-inch pieces
1 teaspoon brown sugar
4 pints stock or water
3 chopped rashers of streaky bacon
Salt and pepper
Garni of bay leaf, parsley, thyme

Recipe Instructions

Boil the chicken.
Put the chicken and bacon in a large saucepan and cover with water. Bring to the boil and remove any scum that comes to the surface. Add ¾ of the leeks, herbs, salt and pepper and return to the boil. Simmer for 2 – 3 hours adding more water if necessary.

Remove the chicken.
Remove the chicken from the saucepan and chop the meat into small pieces and put back into the soup.

Add the other ingredients.
Add the rice, drained prunes and the remaining leeks and simmer for another 30 minutes.

Serve.
Check the seasoning and serve with a little chopped parsley.
