Simple Leek Flan Recipe

Very tasty flan recipe

A flan recipe that is easy to make but extremely tasty.

Ingredients

700g leeks
175g short crust pastry
56g flour
112g butter
150ml milk
84g mature cheddar cheese, grated
Salt, pepper and nutmeg

Recipe Instructions

Preheat the oven to 200C

Make the pastry.
Roll out the short crust pastry and line a 20cm flan ring or case. Place in the fridge to chill.

Prepare the leeks.
Cut off the tops and tails of the leeks and then slice them lengthwise down the middle. Wash thoroughly then cut crossways into thin slices.

Make the filling.
Melt the butter in a saucepan and simmer the leeks over a low heat for 15 minutes stirring occasionally. Stir in the flour and then gradually add the milk stirring until smooth. Season and then remove from the heat. Stir in the grated cheese until it is melted.

Bake.
Pour the mixture into the flan case and bake for 30 minutes until golden brown.
