Sautéed Carrots and Leeks Recipe

A heartwarming side dish recipe

This is a mild and pleasant side dish, good with pasta, potatoes, and soy dishes.

Ingredients

3 medium leeks, white and palest green parts only, chopped
4 large carrots, peeled and sliced
1 tablespoon light olive oil
¼ cup dry white wine
Salt and freshly ground pepper to taste
Pinch of nutmeg, optional

Recipe Instructions

Cook.
Heat the oil and wine in a skillet and add the leeks and carrots. Cook over a medium heat covered for 8 – 10 minutes until tender but still slightly crisp.

Sauté.
Uncover and sauté stirring frequently until the leeks and carrots turn golden. Stir in the nutmeg, salt and pepper and serve.
