Sausage and Leek Pie Recipe

Yield: 4    Preparation Time: 35 mins    Cooking Time: 25 mins
A filling and flavorsome pie which won't stretch the budget to breaking point.


For the pastry.
175g plain flour
85g cold butter, chopped

For the filling.
2 large leeks, sliced and washed
450g pork sausages
25g plain flour
300ml milk
2 teaspoons grainy mustard
25g butter
Handful of chopped parsley

Recipe Instructions

Preheat the oven to 180C.

Make the dough.
Whizz together the butter and flour in a food processor. Add 2 tablespoons of water and pulse until it turns to a ball. Wrap the dough ball in cling film and place in the refrigerator to chill.

Grill the sausages.
Grill the sausages on high for 5 minutes.

Cook the leeks.
Fry the leeks in butter for 2 – 3 minutes then sprinkle in the flour and cook for 2 minutes stirring. Take the pan off the heat and stir in the milk. Season and add the mustard. Return to the stove and bring it to the boil stirring continuously.

Make the pie.
Cut the sausages into 5 pieces and pile into a 1.2L pie dish. Stir the parsley into the leek sauce and pour this over the sausages. Roll out the pastry and cut into a shape 2.5 cm larger than the dish. Brush the rim of the dish and lay the dough strip on top. Press to seal the edges and crimp. Bake in the oven for 25 minutes until golden brown.
