Sausage and Leek Hotpot Recipe

A super tasty leek main course

This meal is a family favorite and the mash is a tasty addition to the casserole.


8 pork sausages
200g sliced leeks
4 cloves garlic, sliced
3 tablespoons olive oil
1 onion, sliced
200ml white wine
400ml passata
400ml chicken stock
2 sticks celery, sliced
2 bay leaves
Small bunch of sage leaves, picked
Salt and black pepper
Small bunch of flat leaf parsley, chopped

For the mash:
800g potatoes, peeled and cut into 4
300ml full fat milk
100g butter
Salt and white pepper
1 bunch of chives, finely chopped

Recipe Instructions

Preheat the oven to 180C

Fry the sausages in a casserole dish until golden brown and remove them from the dish. Place the onions, leeks, garlic, celery and sage into the dish and cook until the mixture starts to brown slightly. Add the wine, stock, passata and bay leaves and season with salt and pepper.

Return the sausages to the dish and cook in the oven for 20 minutes with the lid on.

Make the mash.
Put the potatoes in a pan and cover with water. Simmer for 20 minutes until they are cooked and soft. Drain the potatoes and mash them adding the butter and milk. Stir over a low heat until the butter has melted and the mash is piping hot. Season and add chives.

Remove the casserole from the oven, stir in the chopped parsley and serve with the mash.
