Roast Leeks and Shallots with Garlic Recipe

A delicious leek side dish
Yield: 4    Preparation Time: 5 mins.    Cooking Time: 25 mins
This is a simple side dish that is good with a roast or sausages.

Ingredients

2 leeks
6 shallots
4 garlic cloves
Olive oil
Salt and pepper

Recipe Instructions

Preheat the oven to 200C.

Prepare the leeks.
Cut the leeks lengthways to the core and wash under running water. Cut off the tops and tails leaving the white part whole.

Roast.
Remove the outer leaves of the shallots and garlic cloves and place them in a roasting tin with the leeks. Drizzle over the olive oil and season. Roast in the oven for 25 minutes stirring halfway through.
