Potato, Leek and Bacon Soup Recipe

A tasty leek soup dish for the cold weather

This recipe has flavour, and is quick and easy to make.

Ingredients

2 leeks, chopped
3 large potatoes, peeled and diced.
4 cups chicken stock
Handful of diced bacon
Optional cream and garlic

Recipe Instructions

Cook the vegetables.
Cook the bacon and leeks over a gentle heat until the leeks are soft. You can add garlic if desired.

Boil the soup.
Add the chicken stock and potatoes and bring to the boil. Reduce the heat and simmer covered for 20 minutes.

Blend.
Place in a blender and blend until smooth. Add cream and serve.
