Potato and Leek Soup Recipe

A hearty leek soup recipe

Leek and potato soup has to be a winter classic and a splash of cream transforms the flavor.

Ingredients

6 medium potatoes
4 medium leeks
1 liter vegetable stock
2 tablespoons olive oil
4 tablespoons double cream
Salt & pepper to taste

Recipe Instructions

Prepare the vegetables.
Chop the top off the leek and trim the roots. Chop the leeks lengthways in half and wash under running water. Chop up the leeks roughly. Wash the potatoes and chop them into eighths.

Cook.
Heat the olive oil and add the leeks and potatoes. Stir them well to coat with the oil. Cover and simmer for 10 minutes stirring occasionally.

Add the stock.
Add the stock and stir well. Cover and simmer for 10 minutes until the potatoes are soft.

Blend.
Remove from the heat and liquidize.

Serve.
Season with salt and pepper and stir in the cream just before serving.
