Pork and Leek Stir Fry Recipe

Tasty leek stir fry recipe

A healthy and nutrient rich stir fry.


2 lbs lean pork
1 large leek
1 tablespoon peanut oil
2 teaspoons ground ginger
¼ cup chicken broth
½ cup dry white wine
2 teaspoons soy sauce
2 teaspoons cornstarch
¼ teaspoon salt

Recipe Instructions

Prepare the leeks.
Cut the base off the white part of the leek and discard it. Cut the remaining part of the leek into thin rings. Wash them thoroughly under running water. Break the rings apart and put them in a large bowl of water and let them sit for 5 minutes to remove all the dirt. Remove the leeks from the bowl and dry.

Prepare the pork.
Remove the fat from the pork and cut into ½ inch cubes. Sprinkle these cubes with the ground ginger. Heat the peanut oil in a non-stick pot and fry the pork for 8 minutes until brown. Once the pork is browned, add the leeks and stir fry for another 2 minutes.

Make the sauce.
Add the wine, chicken broth, soy sauce, salt and the remaining teaspoon of ground ginger and bring this all to the boil. In a small dissolve the cornstarch with just a little water. Add this mixture to the pot and stir until thick.
