Onion and Leek Quiche Recipe

An amazing quiche recipe

A delicious French quiche that is ideal for lunches, picnics or parties. Suitable for vegetarians.


4 -5 leeks
1 onion, finely chopped
4 large eggs
340g short crust pastry, homemade or ready made
5 tablespoons of milk
5 tablespoons of cream
1 cup of freshly grated hard cheese, parmesan or cheddar
1 tablespoon olive oil
Salt and freshly ground pepper

Recipe Instructions

Preheat oven to 200C

Make the pastry.
Grease a flan dish and dust with flour. Roll out the pastry and line the dish. Refrigerate for ½ hour. Once chilled, line the raw pastry with foil and fill with cooking beads to prevent the pastry from rising. Bake like this for 7 minutes. Empty the pastry and bake for another 7 minutes.

Fry the leeks and onions.
Wash the leeks and cut them into slices. Fry the onions in a little oil and then add the leeks. Fry until they start to go soft.

Make the sauce.
Mix together the eggs, cream, milk and some of the grated cheese. Add salt and pepper to taste.

Turn the oven temperature to 150C. Place the onions and leeks into the pastry and pour over the sauce. Sprinkle the remainder of the cheese over the top. Bake in the middle of the oven for 40 minutes until well risen and golden brown.
