Macaroni with Leeks and Bacon Recipe

Delicious leek side dish

A tasty side dish that can also be served as a main meal.


6 ounces bacon
3 small leeks
Olive oil
2 ounces butter
2 ounces plain flour
4 cups milk
6 ounces grated cheddar cheese
1/3 cup double cream
2 tablespoons grated Parmesan cheese
1 tablespoons bread crumbs
2 ounces butter for the sauce
Cayenne pepper
Salt, pepper, nutmeg for the topping

Recipe Instructions

Preheat the oven to 375C.

Prepare the pasta.
Bring a large saucepan of water to the boil add a little salt and a drop of olive oil. Add the pasta, bring back to the boil and cook for 10 minutes. Drain and rinse under a cool tap.

Cook the leeks and bacon.
Melt the butter in a pan and add the bacon and leeks. Cook until the leeks are tender.

Make the sauce.
In a separate saucepan, melt the butter and slowly add the flour and milk a little at a time. Stir constantly to avoid the sauce becoming lumpy. Leave to simmer gently. Stir in the grated cheese and season with the salt, pepper and nutmeg. Add the cream in last and stir together.

Butter the sides of an oven proof dish and place the pasta, leeks and bacon into the dish. Pour over the sauce and sprinkle with the bread crumbs, parmesan cheese and cayenne pepper. Bake in the oven until the top is brown and the sauce bubbles.
