Luxury Leek, Chestnut and Apple Stuffing Recipe

A tasty leek stuffing recipe

A decadent stuffing that is very easy to prepare.


3 large leeks, white and pale green parts only, cut into 1-inch pieces
2 celery ribs, sliced ¼ inch thick
6 cups white bread cubes, crust discarded
2 Granny Smith apples, peeled and cut into ½ inch cubes
3 cups bottled peeled roasted chestnuts, halved
1 cup heavy cream
1 stick unsalted butter
1 teaspoon chopped thyme
½ cup chopped flat-leaf parsley

Recipe Instructions

Preheat oven to 350°F with racks in upper and lower thirds.

Bake the bread cubes.
Bake the bread cubes in a large sheet pan for 15 minutes until slightly dried.

Increase oven temperature to 450°F.

Prepare the leeks.
Wash the leeks and drain. Melt the butter in a skillet over a medium heat and cook the leeks and celery for 10 minutes covered stirring occasionally. Add the thyme, apples, salt and pepper and cook for 5 minutes covered until the apples are just tender.

Make the mixture.
Transfer the mixture to a bowl and mix in the bread, chestnuts, cream, parsley, salt and pepper. Spread the mixture into a shallow baking dish.

Bake for 30 minutes in the lower third of the oven until heated through and golden on top.
