Leeks with Rice and Lemon Juice Recipe

A Greek side dish recipe

This is a delicious and traditional Greek dish. Rice, leeks, and dill are topped with a squeeze of lemon juice to let you know it's authentically Greek.


1 pound of leeks
1 ¼ cups of uncooked white rice
2 cups of water
½ cup of olive oil
1 ½ cups of water
1 teaspoon of sea salt
½ bunch of fresh dill, chopped
Juice of 1 lemon

Recipe Instructions

Prepare the leeks.
Cut the leeks lengthwise into quarters and cut the slices into 2 inch long pieces. Rinse well and separate the pieces.

Bring 2 cups of water to the boil adding the leeks and olive oil. Reduce the heat and simmer for 1 hour stirring occasionally. Add the other 1 ½ cups of water and return to the boil. Stir in the rice and salt and simmer covered for 15 minutes.

To finish.
Remove from the heat and stir in the chopped dill and lemon juice. Let this stand for 15 minutes until most of the liquid has been absorbed.
