Leek, Spinach and Red Pepper Gratin Recipe

Cheesy and tasty side dish

A deliciously cheesy side dish which compliments any meal.


1 bunch of leeks, white and light green part only, thinly sliced
2 roasted red bell peppers; seeded, peeled, and chopped
2 (10-ounce) bags fresh spinach
2 teaspoons olive oil
¼ cup light cream cheese
¾ cup milk
2-3 cloves of garlic, minced
½ teaspoon dried basil
¼ teaspoon salt
¼ teaspoon pepper
¼ teaspoon nutmeg
¼ cup dry bread crumbs
2 tablespoons finely grated fresh Parmesan cheese

Recipe Instructions

Preheat oven to 375 degrees.

Prepare the spinach.
Remove the large stems from the spinach and tear into 1-inch pieces. Rinse in a colander and drain. Sauté the spinach for 2 – 3 minutes until wilted and set aside.

Make the sauce.
Heat the olive oil in a pan over a medium heat and add the leeks, red peppers and garlic. Sauté for 5 minutes until softened. Add the cream cheese and combine. Add the spinach, milk, basil, nutmeg, salt and pepper and mix to combine.

Place the mixture in a baking dish coated with cooking spray. Mix together the bread crumbs and Parmesan cheese and sprinkle over the spinach mixture. Bake for 30 minutes until golden brown.
