Quick and easy leek soup dish

A delicious leek soup that is quick and easy to prepare.


2 medium sized leeks, sliced
1 large carrot, thinly sliced
1 liter vegetable stock
2 shallots, diced
2 cloves garlic, diced
1 tablespoon olive oil
Knob of butter
1 teaspoon dried oregano
2 bay leafs
Cheddar cheese
Bread roll

Recipe Instructions

Cook the vegetables.
Heat the pot then add the oil and butter. Once the butter foams add the garlic and shallots and cook until they color. Add the leeks and carrots and stir to combine all the ingredients. Add the oregano and bay leafs and cook covered on a medium heat for 10 minutes.

Add the stock.
Add some of the stock but do not cover the leeks. Bring this to the boil and then simmer for 10 – 15 minutes until the leeks are soft. Add the remainder of the stock and simmer for another 7 minutes.

Prepare the bread.
Cut the bread into chunks and grill with some extra virgin olive oil until golden. Sprinkle with a little cheese and grill until the cheese has melted.

Serve the soup hot with the grilled bread chunks.
