Leek & Potato Soup Recipe

A hot and delicious leek soup dish

A tasty simple soup perfect for those cold winter nights.

Ingredients

2 leeks
2 potatoes
4 cups chicken or vegetable broth
1 glove garlic grated
225ml milk or cream
2 tablespoons butter or margarine
¼ teaspoon salt
¼ teaspoon pepper

Recipe Instructions

Prepare the leeks.
Clean the leeks and then slice them longwise twice and chop from the top to the bottom.

Fry.
Melt the butter in a saucepan and add the chopped leeks and garlic. Fry them over a medium heat for about 10 minutes until the leeks are soft. Stir frequently so that they do not brown.

Add other ingredients.
Peel and chop the potatoes into cubes. Add the potatoes and all the other ingredients except the cream to the saucepan.

Cook.
Bring the soup to the boil and then let it simmer for about 20 minutes until the potatoes are soft. Use a masher to break down the potatoes in the soup for a creamier mixture. Just before serving, pour the cream into the soup and stir well.
