Leek, Potato and Bacon Soup Recipe

A delicious warmer soup for the whole family

An easy to make winter warmer soup with plenty of flavor, great as a starter or main course.

Ingredients

300g leeks, washed and finely chopped
300g potatoes, peeled and sliced
290ml milk
150g chopped smoked bacon, fat removed
700ml vegetable stock
Olive oil
Ground black pepper

Recipe Instructions

Sauté the vegetables.
Sauté the potato, leeks and bacon in a pot with olive oil until soft.

Boil.
Add the stock and bring the mixture to the boil. Reduce the heat and simmer until the potatoes are tender.

Blend.
Place the soup in a blender and blend until smooth.

To finish.
Return the soup to the pot and add the milk and black pepper to taste. Re-heat and serve.
