Leek, Potato and Bacon Soup Recipe

A delectable leek soup dish

An easy soup, perfect for winter as a main meal, and a hit with the kids.

Ingredients

2 tablespoons olive oil
4 rashers bacon, chopped
3 stalks celery, thinly sliced
1 teaspoon ground coriander
3 large potatoes peeled and cubed
1 liter vegetable stock
1 large leek, thinly sliced

Recipe Instructions

Cook the vegetables.
Heat the oil over a medium heat and add the bacon, celery, leek and coriander. Cook stirring for 3 minutes until the bacon is cooked. Add the potatoes and cook stirring for 1 minute.

Boil the soup.
Blend in the stock and bring to the boil over a high heat. Reduce the heat and simmer covered for 10 – 15 minutes until the potatoes are tender.

Blend.
Puree the soup until smooth with a blender.
