Leek Mashed Potato Recipe

The addition of leeks to the classic mashed potatoes gives the dish a unique taste.


5 medium potatoes, peeled and largely diced
2 medium leeks, thinly sliced (white and pale parts only)
¼ pound butter
1 tablespoon minced garlic
½ cup fresh cream
Salt and white pepper to taste

Recipe Instructions

Cook the potatoes.
Place the potatoes in a large pot and season well with salt and pepper. Cover the potatoes with water and boil the potatoes until tender. Remove from the stove and drain.

Cook the leeks.
Wash and drain the leeks. Melt the butter in a saucepan and add the leeks and garlic. Cook for 3 – 5 minutes until wilted.

Mix together.
Place the leeks and potatoes in a large mixing bowl. Add the cream and mash well. Serve hot.
