Leek and Potato Vichyssoise Recipe

A delectable leek potato soup

A smooth, creamy vegetable soup full of flavor.

Ingredients

1 onion, sliced
2 medium leeks, sliced
225g potatoes, cubed
1.2 liters vegetable stock
150ml double cream
1 tablespoon vegetable oil
Salt and freshly ground black pepper

Recipe Instructions

Cook the vegetables.
Heat the oil in a large pan and add the onions, potatoes and leeks. Cook for 3 – 4 minutes until they start to soften.

Boil the soup.
Add the vegetable stock to the pan and bring to the boil. Season well and simmer until the vegetables are tender.

Blend.
Pour the soup into a blender and blend until smooth. Reheat in a clean pan and stir in the cream. Heat through and then serve.
