Easy Leek and Potato Soup Recipe

A simple leek soup recipe

A tasty simple soup perfect for those cold winter nights.

Ingredients

200g potatoes
400g leeks
750ml vegetable stock
1 medium onion
250ml milk
4 tablespoons oil
Salt and pepper

Recipe Instructions

Sauté the vegetables.
Slice the leeks and chop the potatoes and onions. Sauté the vegetables in hot oil for 10 minutes.

Boil.
Add the stock to the pan and season with salt and pepper. Bring this to the boil and simmer covered for 20 minutes until the vegetables are tender.

Blend.
Remove from the heat and stir in the milk. Pour into a liquidizer and blend until smooth. Return to the stove and reheat slowly before serving.
