Leek and Potato Bake with Cheese Recipe

Leeks and potatoes in a tasty treat

A lovely creamy bake consisting of a layer of sliced potatoes, a layer of chopped leeks topped with a creamy sauce and grated cheese.


2 large leeks
5-6 big potatoes
A block of mature cheddar cheese grated
300ml milk
1-2 tablespoons flour
Salt, pepper, fresh garden herbs to taste

Recipe Instructions

Prepare the potatoes.
Either part boil the potatoes or slice them very thinly so they will cook through in the oven.

Prepare the leeks.
Chop up the leeks roughly.

Make the sauce.
Melt a knob of butter with the milk and then add the flour slowly. Keep stirring to ensure it stays smooth. Add half of the grated cheese and keep stirring until the cheese has melted. Add seasoning to taste.

Layer the potatoes on the bottom of an oven-proof dish, place the leeks on top and pour over the sauce. Add the remainder of the grated cheese on top. Bake for 30 – 35 minutes at 180c until brown on top and the potatoes are easily pierced by a fork.
