Leek and Chicken Soup Recipe

A warm soup for the cold weather

A simple recipe for the Scottish favorite cock a leekie. Enjoy this soup with some crusty whole grain bread.


2 teaspoons olive oil
1 cup finely chopped sweet onion
1 medium carrot, halved lengthwise and sliced
2 medium leeks, halved lengthwise then sliced
1 celery stalk, sliced
8 ounce pack of sliced cremini mushrooms
1 ½ cups diced cooked skinless chicken breast
6 cups fat-free, low-sodium chicken broth
2 cups water
1 tablespoon chopped fresh parsley
2 teaspoons fresh thyme

Recipe Instructions

Cook the vegetables.
Heat the oil and sauté the onions, leeks, carrots and celery until the leeks and onions are soft. Add the mushrooms and cook these until they are soft. Sprinkle in the herbs and cook for 1 minute until fragrant.

Add the chicken.
Stir in the chicken, the chicken broth and the water. Bring this to the boil and then simmer for 15 minutes.
