Leek and Carrot Soup Recipe

A healthy leek recipe

Carrots are a welcome change to potatoes. This recipe has two possibilities so you can choose the one that you would prefer.

Ingredients

1 Large Leek
2 celery stalks
2 large carrots
3 bay leafs
1 teaspoon oregano
1 teaspoon basil
5 cups chicken or vegetable stock or 5 cups of water mixed with 5 tablespoons of tomato sauce.

Recipe Instructions

Prepare the vegetables.
Chop up the tender part of the leek and cut the carrots diagonally. Chop up the celery stalks including the leaves.

Boil.
Bring the stock or tomato sauce mixture to the boil and add the leeks and carrots. Once boiling add the celery, bay leafs and spices. Let the soup simmer for at least 1 hour and bring it to the boil just before serving.

Serve.
Remove the bay leafs and serve while still hot.
