Leek and Broccoli Mash Recipe

A nutritious side dish
Yield: 4    Preparation Time: 15 mins    Cooking Time: 20 minutes
Creamy, satisfying and high in nutrients. This dish may very well replace mashed potatoes on your dinner plate.

Ingredients

1 large leek, roughly chopped
1 ½ pound broccoli, cut into 1-inch chunks, including stems
1 ½ cups vegetable or chicken broth
2 cloves garlic, smashed
¼ cup plain yogurt or light sour cream
Salt and pepper

Recipe Instructions

Boil the ingredients.
Combine the broccoli, leek, garlic and chicken broth in a large stock pot and bring to the boil. Simmer on a low heat covered for 20 minutes until the broccoli is tender.

Blend.
Remove from the heat and puree in the pot with an immersion blender.

To finish.
Stir in the yogurt or sour cream and season with salt and pepper.
