How to Make Leek Soup

Leeks are a delight especially when made into soup.  Unlike onions, it’s much lighter yet with a full-bodied flavor.  It has a great texture and is simple to make.

In order to cook this soup, you would need:

  • 1 diced shallot
  • Butter
  • 1 clove of garlic
  • ½ tbs of olive oil
  • 1 sliced leek
  • 1 julienned carrot
  • ½ liter vegetable stock
  • Bay leaf
  • Dried oregano
  • Bread Roll, cut into chunks
  • Cheddar cheese

Begin by heating the olive oil and butter in a pot until the butter foams.  Add the shallot and garlic and let it color a little before adding up the carrot and leek.  Stir for about a minute then add the oregano.

Cover the pot a little and let all the ingredients cook for about ten minutes.  After that, pour half of the vegetable stock and allow to boil for another ten minutes.  Check if the carrot is cooked yet a little crunchy.

Once both the carrot and leek are cooked, pour in the remaining vegetable stock.  Simmer for five minutes.

While waiting, spread extra virgin oil on the chunks of bread and grill them until they become a golden brown color.  Sprinkle small bits of cheese on the bread until it has melted.

This delicious leek soup will serve two people.  Enjoy!
