Ham, Turkey and Leek Pie Recipe

A mouth-watering leek recipe

An ideal main meal that can be made from leftovers.


350g cooked turkey, cut into chunks or strips
125g cooked ham, cut into chunks
6 leeks, cleaned and chopped
200g ready make short crust Pastry
1 tablespoon English mustard
1 liter turkey stock
90g butter
1 lightly beaten egg
25g flour
A pinch of salt & black pepper
2 tablespoons chopped parsley

Recipe Instructions

Preheat the oven to 220C

Make the sauce.
Melt the butter in a heavy based pan and remove from the heat. Add the flour while off the heat. Whisk in the turkey stock and cook over a medium heat stirring all the time until the sauce is smooth. Season well and add the mustard.

Prepare the pie.
Place the turkey pieces, leeks and ham in the bottom of a pie dish and sprinkle with the fresh parsley. Pour over the sauce. Roll out the pastry and cover the pie dish.

Brush the beaten egg over the pastry and bake in the oven for 20 – 25 minutes. After this time, reduce the heat to 180C and bake for an extra 15 minutes.
