Cheese and Leek Jacket Potatoes Recipe

An excellent recipe for a simple and healthy meal.


2 medium baking potatoes, scrubbed
1 tablespoon olive oil
200g leeks, sliced
2 tablespoons mayonnaise
Salt and pepper
50g cheddar cheese, grated
Dash Worcestershire sauce

Recipe Instructions

Preheat the oven to 200C

Bake the potatoes.
Scrub the potatoes and bake them for 1 hour until thoroughly cooked. Cut the potatoes in half lengthways and scoop out most of the flesh.

Make the filling.
Heat the oil in a frying pan and fry the leeks for 3 – 4 minutes. Mix the potato flesh, leeks, mayonnaise, seasoning and Worcestershire sauce together in a bowl. Place the mixture back into the potato jackets.

Top the potatoes with the cheese and grill for 3 – 4 minutes until the cheese has melted and is slightly golden. Serve immediately.
