Ingredients
1 head cauliflower
1 narrow leek, white and pale green parts cut into tiny confetti
1 heaped tablespoon flour
1 tablespoon butter
¾ cup milk
1 cup shredded cheddar cheese
Handful of bread crumbs
Handful of grated parmesan cheese
Black pepper to taste
Recipe Instructions
Cook the cauliflower.
Boil the cauliflower in salted water for 5 minutes until slightly crisp and then drain.
Make the sauce.
Melt the butter in a saucepan and sweat the leeks for a few minutes. Add the flour and then cook for a few more minutes. Add the milk and whisk until the mixture begins to thicken. Stir in the pepper and cheddar cheese into the mixture and remove from the heat. Keep stirring until the cheese is fully melted.
Bake.
Transfer the cauliflower into a casserole dish and pour over the cheese sauce. Sprinkle over the bread crumbs and parmesan cheese and bake at 350 degrees for 15 minutes until the golden.
