Buttered Leeks with Thyme Recipe

A delectable leek side dish

A Scottish favorite and one of the best ways to cook leeks – slowly and gently in their own juice.


1.8kg leeks, trimmed
50g butter, plus extra for serving
Thyme leaves for garnish

Recipe Instructions

Prepare the leeks.
Cut the leeks from the top to root and wash thoroughly. Slice them diagonally and put them in plastic bags to chill. This should be done the day before.

Cook the leeks.
Place a pan over a medium heat and add the butter. Allow the butter to melt over the base of the pan and add the leeks and plenty of seasoning and stir to coat the leeks with the butter. Reduce the heat and cook gently covered for 15 minutes stirring halfway through.

To serve.
Serve with extra butter and a sprinkling of thyme leaves.
